When you are in a time crunch to get a meal on the table Tortillas can be a great go to. Jessica Harlan has a great new book called Tortillas To The Rescue Cookbook where she shares ideas for yummy breakfast, snacks, appetizers, main dish meals and even sweet endings all using store bought flour and corn tortillas. She also shares recipes on how you can make your own flour and corn tortillas as well as how you can use them as a substitute in a dish such as a crust for a quiche.
I have an obsession with Tex-Mex cuisine. I would have to say if I had to eat one style of food for the rest of my life it would be Tex-Mex. Blame it on the cilantro and cumin or possibly the guacamole and chipotles. But I think it is really the simplicity of the crispy corn shell and the delightful texture of a flour tortilla. I actually plan meals for the sole purpose of having leftovers so our family can have taco night.
The book Tortillas To The Rescue Cookbook has so many great spins on dishes I already prepare as well as ones that I have never thought of. Who doesn’t love breakfast burritos, enchiladas or tortilla soup but have you ever thought of using tortilla’s to make Philly Cheese Steak Tacos, Shrimp Po’boys or using a tortilla instead of a burger bun to create Burger Pouches. Well this book has the recipes that they will make your mouth water. There are also great appetizer suggestions that I am really looking forward to trying such as the Fig and Goat Cheese Pinwheels or Creamy Bacon and Horseradish Wedges. There are so many great ideas in this book that I can’t decide what to try first.

I love home made tortillas. The best are the ones made from flour that you roll out and fry. The easiest are the pancake ones with lots of spices that don’t need so much effort!
