She also shares recipes on how you can make your own flour and corn tortillas as well as how you can use them as a substitute in a dish such as a crust for a quiche.
I have an obsession with Tex-Mex cuisine. I would have to say if I had to eat one style of food for the rest of my life it would be Tex-Mex. Blame it on the cilantro and cumin or possibly the guacamole and chipotles. But I think it is really the simplicity of the crispy corn shell and the delightful texture of a flour tortilla. I actually plan meals for the sole purpose of having leftovers so our family can have taco night.
The book Tortillas To The Rescue Cookbook has so many great spins on dishes I already prepare as well as ones that I have never thought of.
